Guess who's coming to dinner?



After returning from Calgary last night, we were all a little out of sorts thanks to a few days of bad naps, a long flight, and adjusting to the time change. So today, I was really at a loss for what to make for dinner. It was the perfect night for a frozen pizza, but we are tryyyyying to be healthy and limit the 'bad' carbs. We had an extra batch of quinoa in the fridge, and I found lamb and mint quinoa salad recipe online that sounded perfect....but my local deli had no lamb, and no mint....perfect. So instead of lamb, I bought some pork chops and apples to add with the quinoa, along with some steamed asparagus, cucumber, dried cranberries and toasted almonds, and topped it all off with a honey and apple cider vinigar dressing. It was yum; even the engineer approved!
